Sharmagne's Spring Salad with Romaine Lettuce
from the kitchen of Sharmagne Leland-St. John
1 head of romaine lettuce
1/4 cup dried cranberries
1/2 cup coarsely chopped walnuts
1 Granny Smith green apple
1/2 cup crumbled feta cheese
Prepared Blue Cheese or Feta salad dressing. (Available at
most markets)
Place desired amount of dressing in the bottom of a large
glass bowl. Wash and chop the lettuce crosswise.
Place in bowl. Add most of the dried cranberries and
most of the chopped walnuts. Reserve a few to sprinkle on top.
Wash the apple. Core and cut into 1/4 inch round slices.
Place the rounds on a cutting board and cut into small
triangular wedges. Add to salad. Toss well coating
evenly with the dressing. Sprinkle the crumbled
feta on top. Garnish with the reserved cranberries and
walnuts.
