Orange Flavoured Zucchini Bread
from the kitchen of Sharmagne Leland-St. John

1 1/2 cups white flour
1/2 cup sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon Kosher salt or 1/4 tsp. table salt)
1/2 teaspoon ground ginger powder or 1 teaspoon grated fresh
2 eggs
1/2 cup vegetable oil
1 1/2 cups grated zucchini
1/4 cup chopped orange peel (do not grate)
1/2 cup chopped walnuts

In a medium size bowl mix all the dry ingredients.  In a large bowl beat the eggs, then add the oil and zucchini.  If using fresh ginger add this now.  Stir the dry ingredients into the egg mixture, then add the orange peel and walnuts.  Mix well.
Pour the mixture into a buttered nine inch glass loaf pan.  Bake in a pre heated oven at 375 degrees for 50 minutes or until a straw or toothpick inserted in the center comes out clean.  Let cool in the pan for 5 minutes then turn out onto a cooling rack.

Great served with a combination of 1/2 English Breakfast tea and 1/2 Earl Grey or a smoky Russian  Caravan tea.
