Beef in Guiness
from the kitchen of Sharmagne Leland-St. John

½ pounds of beef
2 large onions
6 medium carrots
2 tablespoons seasoned flour
Fat or beef dripping
½ cup Guiness
½ cup water
Parsley sprigs, chopped

Trim the beef of fat and cut into cubes.   Peel
and slice the onion. Dredge the beef in the flour.
Brown quickly in hot fat. Remove the meat and
add the onions.  Fry until transparent. return the
meat and add the carrots, Guiness and water.
Bring to a boil and reduce heat immediately to a
simmer.  Cover and simmer for 1 
½  to 2 hours.
Do not let the meat dry out. Add more Guiness if
necessary.  Sprinkle with the parsley and serve
with boiled new potatoes.
