Cold Broccoli Curry Soup
from the kitchen of Sharmagne Leland-St. John

1 large head of broccoli
4-6 cups chicken broth
1 medium white onion, thinly sliced
2 tablespoons curry powder
juice of one lime
thin sliced limes
dollops of sour cream
fresh snipped chives

Separate the brocolli into florets and trim and chop stem.
Place the brocolli, broth, onion and curry powder in a soup kettle.
Bring to a boil then simmer over low heat for 15-20 minutes.
Place in a blender 1/2 at a time and blend until smooth.
Place in a refrigerator storage container, add the juice of one lime.
Let cool then cover and chill for 4 hours.

To serve: Ladle into decorative bowls, place a lime slice in the center
of each bowl, spoon a dollop of sour cream atop each lime slice,
sprinkle with snipped chives and serve.
