Sweet Potato Nests with Escalloped Apples

Escalloped apples:

1 pound of  apples, peeled, cored & sliced
1/2 cup flour
1/4 cup lemon juice
1/2 cup sugar
1/4 teaspoon cinnamon
4 tablespoons butter

Mix apples, flour, lemon juice, sugar and cinnamon. Place in a buttered oven-proof casserole. Dot with butter.   Set aside.


Sweet Potatoes:

Escalloped apples, divided
6  sweet potatoes or yams, peeled and cooked
2 large eggs
2 tablespoons butter
1 tablespoon dark brown sugar
1/2 teaspoon pure vanilla extract
1/4 teaspoon ground nutmeg
Salt, to taste
6 pecans for garnish


Preheat oven to 400°F (205°C). Lightly grease a baking sheet.
Whip sweet potatoes until smooth in a large mixing bowl. Add eggs, butter, sugar, vanilla extract and nutmeg; beat until well combined. Season with salt.
Spoon the mixture onto prepared baking sheet, forming 6 mounds, 2 inches apart. Using back of a spoon, make a depression in each mound to form a shell. Fill centres of shells with escalloped apples. Place one whole pecan atop each “nest”
Bake for 30 minutes.

Makes 6 servings.
