Spicy Black Bean and Corn Stuffed Red Peppers
From the kitchen of Sharmagne Leland-St. John

1 large red bell pepper
1 large cob of yellow corn, roasted
1 cup of cooked black beans
Olive oil for drizzling
Cajun seasoning (recipe below)

Pre-heat the oven to 350°

Wash the pepper and cut into quarters, remove the seeds and inside
membranes.

Remove the roasted corn from the cob and mix together in a bowl with
the black beans. Season with the Cajun spice. Spoon the bean-corn
mixture into the red pepper "boats".

Drizzle with the olive oil and bake for 20 minutes.


Homemade Cajun Seasoning

3 tablespoons paprika
2 tablespoons kosher salt
2 tablespoons garlic powder
1 tablespoons black pepper
1 tablespoons onion powder
1 ½ tablespoons cayenne powder
1 tablespoons oregano
1 tablespoons thyme

In a clean dry jar mix together the above ingredients.
store in a tightly-sealed container in a cool, dark place.
