Bailey's Cream Cheese Frosting
from the kitchen of Sharmagne Leland-St. John

4 cup powdered sugar
12 cup sweet butter, softened
8 ounce package cream cheese, softened and cut into pieces
4 to 6 tablespoons Bailey's Irish Cream
Green sprinkles or green food colouring

In a large mixing bowl beat the softened butter on
high speed until smooth and creamy, approximately
2 minutes.

Drop the speed to low and slowly add the powdered
sugar. Continue on low speed as you slowly beat
in the cream cheese one piece at a time.

Add the Bailey's Irish Cream and food colouring
and mix in thoroughly.

When the cupcakes have cooled, put the frosting
into a piping bag with a star nozzle and frost
each cupcake separately then sprinkle with green
sprinkles.
