Bacon and Cheese Mac
from the kitchen of Sharmagne Leland-St. John

134 cups cavatappi pasta, uncooked
3 tablespoons butter
2 tablespoons flour
2 cups milk
2 cups shredded sharp white cheddar cheese, divided
4 slices Black Forest bacon, cooked and crumbled

Heat oven to 350 ° F.

Cook cavatappi as directed on package.

Melt butter in large saucepan on low heat. Stir in
the flour; cook for 2 minutes until bubbly. Gradually
stir in the milk.

Stirring constantly cook on medium heat until mixture
comes to boil,. Simmer on low heat for approximately
3 to 5 minutes or until thickened.

Add 112 cups cheese. Cook and stir 5 minutes
until melted.

Drain the cavatappi. Add to the sauce with bacon. Mix
lightly and spoon into a 112 quart casserole. Top with
remaining cheese.

Bake for 20 minutes until thoroughly heated.
