Rose Water Ices

2 cups fragrant Rose Petals
1 cup + plus 2 tablespoons superfine sugar
3 cups cold water
3 tablespoon fresh lemon juice
1 cup sparkling wine

Cut the triangular colored base from each rose petal.
Place the rose petals and sugar in a food processor,
mix until smooth. Occasionally scrape down sides.
Add 12 cup of water. Blend for a few seconds
Add the remaining water, lemon juice, and sparkling wine. Blend.
Filter mixture through a sieve.
Place mixture in an ice cream maker and follow instructions.
Store in freezer to harden.
