Lavender Infused Honey
from the kitchen of Sharmagne Leland-St.John

8 ounces clover honey
3 tablespoons food grade dried lavender buds

Measure the lavender into two lengths of 6" x 9" cheesecloth.
Fold each piece in half and tie with butcher string.

Pour the honey into the top of a double boiler and add the
lavender sachets. Heat for approximately 40 minutes on a low
to medium flame, stirring every few minutes. The water in the
double boiler should be at a light simmer. Do not boil.

Let cool then remove the sachets with a pair of tongs.

Pour into a decorative jar and store in your pantry for up
to a year.
