New Hampshire Spice Cake
from the kitchen of Sharmagne Leland-St. John
2 cups flour
1 teaspoon baking soda
1 teaspoon baking powder
1⁄2 teaspoon salt
3 teaspoons cinnamon
1⁄2 teaspoon ground clove
1⁄2 teaspoon freshly ground nutmeg
1⁄2 teaspoon ground ginger
1⁄2 teaspoon allspice
1⁄2 cup butter
2⁄3 cup brown sugar
1 cup maple syrup
1 cup low-fat yogurt
2 eggs
Preheat oven to 350º F.
Combine all the dry ingredients: flour, baking soda,
baking powder, salt and spices in a large bowl, and
mix well.
In separate bowl, cream together butter and brown sugar.
Slowly pour in the maple syrup, followed by yogurt and
then eggs.
Sift the dry ingredients into the liquid mixture, until
fully incorporated.
Pour into a 9"x13" baking pan or two heart shaped pans
and bake for 35-40 minutes.
Allow to cool before frosting.
