Garlic Bread Supreme
from the kitchen of Sharmagne Leland-St. John

1 loaf of Italian or French bread
2 large cloves of garlic, smashed and minced
1/2 cup (1 stick) unsalted butter, softened
8 ounces mascarpone cheese or cream cheese, at room temperature
Garlic salt to taste
2 heaping tablespoons of freshly chopped Italian parsley
1/4 cup freshly grated Parmesan or Pecorino cheese (optional)

Slice the bread loaf in half lengthwise. Rub the crusts
of both halves with the smashed garlic cloves. Then mince
and set aside. Spread 1/4 cup of the butter on each
loaf. Then spread both halves with the mascarpone or
cream cheese. Sprinkle garlic salt to taste. Add the
minced garlic, and parmesan. Top with the parsley, and
place under the broiler for a few minutes until golden.
Be careful not to burn the bread.
