Bergamot Bitters
from the kitchen of Sharmagne Leland-St. John

Several large pieces of peel from a bergamot (no pith)
2 whole green cardamom seeds
Flavorless grain alcohol (to cover)

Combine the ingredients in a small tightly sealed jar.
Store in a dark cupboard for approximately 3 weeks.
Strain the peel and cardamom seeds from the liquid.
Store in a bitters bottle with a tight-fitting lid.
