Banana Nut Bread
from the kitchen of Sharmagne Leland-St. John

2 cups whole spelt or whole wheat flour
½ teaspoon salt
½ teaspoon baking soda
1 teaspoon baking powder
3 large overly ripe bananas  (1½ cups mashed)
2 eggs
½  cup brown sugar
½  cup milk
2 teaspoons pure vanilla
½  cup chopped pecans or walnuts
   


Combine in a large bowl the flour, salt, soda,
and baking powder, blend well. In a second
bowl mash the bananas, add the 2 eggs, well
beaten, the sugar, milk and vanilla. Mix the dry
ingredients intothe wet until just combined. Fold
in the chopped nuts. Generously butter and dust
loaf pan. Pour the batter into the pan and bake
in a preheated 350º oven for 50 minutes or until
a toothpick inserted into the middle of the loaf
comes out clean. Remove from oven, let rest
for 5 minutes, then place on a rack to cool.
